Mushroom are a great source of antioxidants, vitamin B, calcium, selenium, minerals, protein and fibre.

They are as old as the herald of civilisation in Egypt. Folklore has it that pharaohs at the time were so much delighted by its taste that they declared it as royalty food and forbade commoners from touching them. They just couldn’t afford to share its supply.

Cooking white button, shiitake, oyster and king oyster mushrooms along with different cooking methods within short cooking times enables them retain more of their vitamins and nutrients.

Microwaving or grilling mushrooms significantly increased their antioxidant activity, even when grilled in a small amount of oil, when compared to boiling or frying.
