FOODSPIRATION! FUN WAYS TO COOK AND SERVE YOUR BEAN PUDDING (MOI-MOI)
One of the delicacies that almost every Nigerian home relishes or delights in is Moi-Moi. This delicacy, (also called moin moin) is a delicious, savoury steamed bean pudding made commonly in Nigeria from a mixture of blended black-eyed peas or beans, peppers, onions, and spices.
This moin moin/moi moi recipe uses smoked trout, but you can switch it out for any other cooked fish, corned beef, boiled eggs, or omit the animal protein altogether and make it vegan. It has also been limited to being cooked in tins, polythene nylons and banana leaves which also give a variety of taste.
However, in the spirit of creativity, we will be sharing different mind-blowing ways to serve this African mouth-watery dish.
