RECIPE FOR HEALTHY SPAGHETTI BOLOGNESE

Healthy Spaghetti Bolognese
Nothing screams comfort than a bowl of spaghetti, you can always count on it – for cold days while draped with a blanket or while experiencing a major heartbreak. If you are on a healthy living journey and you’re looking for ways to shed off few calories then this recipe is just for you. The good thing about it is that it takes less than an hour to prepare.
- 1 Lb. Ground Turkey Breast
- 1 Tbsp. Extra Virgin Olive Oil
- 2 Carrots, diced
- 2 Tbsp. Tomato puree
- 1 Tbsp. freshly ground pepper
- 300g wholewheat spaghetti
- 4 large mushrooms, sliced
- Salt for boiling the spaghetti
- 2 teaspoons vegetable stock powder (or salt to season – adjust to your tastes)
Heat the olive oil in a large saucepan over a medium heat. Add olive oil and your ground turkey and begin sautéing. Add salt and pepper to season the turkey meat.
Add mushrooms and carrot, cook for around one minute, then add tinned tomatoes, vegetable stock, tomato purée, freshly ground black pepper and salt (then season to your taste)
Stir well till it boils, then reduce the heat to simmer for 15-20 minutes, until the sauce has thickened.
Place the wholemeal spaghetti in a deep saucepan full of salted boiling water and cook according to packet instructions, then drain.
Add your bolognese sauce and serve immediately.
